Cucumber, Raspberry, and Mint Salad

Fresh summer salad!

This salad just sort of happened as I was looking for a side to serve with some sandwiches for dinner other than chips.  I had cucumbers, since this is the month of the cucumber.  There were unused raspberries I had purchased for snacks and didn’t snack on.  A quick survey of the garden reminded me of my highly anticipated and much under-utilized serrano peppers and mint.  Slowly, the ingredients assembled themselves.  Cucumber and raspberry are two flavors that aren’t paired often enough, I assure you.   In fact, I am anxious to bring those two together again.  And, resist the urge to salt this salad.  I am a complete saltaholic, and I promise you that this doesn’t need a single grain of the stuff.

Cucumber, Raspberry, and Mint Salad

for the salad

  • 2 cucumbers
  • 1 white onion
  • 1 pint raspberries
  • 2 T fresh mint, chopped
  • 1 serrano pepper, seeded and de-veined
for the dressing
  • 2 T rice vinegar
  • 2 T honey
  • 1/4 tsp ground ginger
  • 1/4 tsp garlic powder
  • juice of half a lime
Wash the cucumbers, then use a vegetable peeler to peel stripes from the skin.  Slice the cucumbers in half lengthwise.  Next, remove the seeds using a melon baller or a teaspoon.  Slice the de-seeded cucumbers in thin crescents and place in a serving bowl.  Peel the onion, cut in in half, and slice in in paper-thin crescents.  Wash and add the raspberries and mint.  Finely mince the pepper, if using, and add it to the bowl as well.  
Now, make the dressing.  Whisk all of the ingredients together until the honey is completely blended into the vinegar.  Pour the dressing over the salad, and toss to combine all ingredients.  Garnish with lime wedges and serve immediately or chill for an hour or so.
Serves 4.
