Indian Summer Salad

This salad is a simple dish.  It’s made with some of the farmers’ market ephemera available only during indian summer.  Figs, pecans, and fresh arugula are dressed simply with a warm, brown sugar balsamic vinaigrette.  This salad tastes of the impending fall and the loss of summer.  It’s delicious, and lovely served with roast chicken.

Indian Summer Salad

 

  • 4 C arugula
  • 12 figs, sliced in half
  • 1/4 C pecan halves, toasted
  • 3 T extra virgin olive oil
  • 3 T balsamic vinegar
  • 1 1/2 T brown sugar
Wash the arugula and place in a serving bowl.  In a small saucepan on the stove, whisk together the olive oil, vinegar, and brown sugar.  When the dressing is well combined and warm, pour it over the arugula.  Add the figs and pecans, then toss to combine.  Serve while the dressing is still warm.
Serves 4.

  1. It really looks delicious. I do love to eat vegetables and looking this photo above made me hungry and crave for food. Anyway, Thank you for sharing this recipe. I am not that familiar with Indian foods and this one is great.
